ROAST CHICKEN WITH POTATOES

Ingredients
1 large chicken
1/4 cup of Greek olive oil
1/4 cup of lemon juice
1 tablespoon of HERB BLEND FOR CHICKEN
2 tablespoons of mustard
1 kg potatoes peeled and sliced in quince style slices
1 tablespoon butter
Salt & Pepper

Wash the chicken well and put it (breast sid up) in a baking pan.
Was the potatoes and put them around the chicken.
Mix the olive oil and lemon juice with the mustard in a jut and stir well.
Pour this mixture overy the chicken and potatoes and rub it with your hands.
Season with salt, pepper and our HERB BLEND FOR CHICKEN.
Finish by dotting small pieces of butter on top.
Cover the baking tray with silver foil or greaseproof paper and bake in the oven at 180 degreece C for approximately one hour.
Remove the silver foil and bake for another 20-30 minutes until the chicken an potatoes have a nice colour and are soft on the inside but golden brown and crispy on the outside.
