LAMB KLEFTIKO

Ingredients

1 kg of lamb (without the bone) cut in small portions
2-3 tablespoons of olive oil
Salt &Pepper,
OUR BLEND FOR LAMP
Lemon Juice
2 large tomatoes cut in round slices,
2-3 large potatoes cut in round slices,
2 carrots, cut in round slices,
2 garlic cloves finely chopped,
3 tablespoons of butter,
1/4 cup of olive oil
250 grams of feta cheese or mild cheddar in slices

Wash the lamb and put it on a plate. In a bowl put 2-3 tablespoons of olive oil and season with salt, pepper and our HERB BLEND. Add 2 tablespoons of lemon juice (and if you want 1 tablespoon of mustard), mix and toss the meat in it. Cover with silver foil and let it rest in the fridge for a couple of hours.
In a clay pot or a tray spread some olive oil (3 tablespoons) and lay the lamb with the totatoes, potatoes, carrots, garlic and olive oil. Add some salt and pepper if you want - although you should be careful because the cheese might be salty).
Put the cheese slices on the top and cover with grease proof paper or silver foil.
Pre-heat the oven to 180degrees C and bake for about 40 minutes. Then remove the greaseproof paper or silver foil and cook for another 10-15 minutes until the cheese slices are golden brown.

You could also create individual portions by puting the lamb in greaseproof paper pouches. (In each pouch you put the meat with tomato, potatoes, carrots, garlic and cheese on top. Close the pouches and place them in a tray. Cook them for 50-60 minutes. Serve the pouches and let your guests open them.
